Gluten Free 5 Ingredient Macaroni Salad

This is a family recipe, a.k.a. Shell Macaroni Salad because usually I use the pasta that looks like little seashells or conchiglie. You can use any pasta with this recipe and it is as good gluten free as it is regular. This time I used the elbow macaroni from DeLallo. DeLallo holds up and has great flavor. This is great as a side dish with hamburgers, hot dogs, or even steaks. But, it's filling enough to be a great lunch time meal. Make a double batch to have leftovers. Use light mayo or fat free to lessen the calories and fat content.


Serves: 4-6

Cook Time: 30 minutes

  • Ingredients

    1 bag of your favorite gluten free pasta

    1 large jar of jumbo green olives

    1 medium sized white onion

    2 cans of white albacore tuna in spring water

    1/2 jar of mayonnaise* (can use light or fat free, I prefer the one with olive oil)

    Salt & Pepper 

    * Mayo can be adjusted to desired taste. If you like more of the other flavors to come through or prefer it a little dryer, use a little less. You can always add more, but once it's in the salad you can't take it out. Gluten free pasta tends to soak up the mayo more than regular. I usually start with 2-3 large spoons of mayo and place in refrigerator over night. Before serving I add another 1-2 spoonfuls if needed. 

  • Methods / Steps
    Boil pasta according to package. Do not overcook.
    Drain and allow to cool. I run cool water over to help this process as sometimes gluten free pasta can be come "gummy" when refrigerated
    Add sliced green olives
    Add diced onion
    Add Tuna
    Add Mayo
    Mix gently, but make sure it is coated thoroughly
    Salt and pepper to taste
    Chill in refrigerator until ready to serve
