Description

This is one of the easiest, fastest and delicious things I've ever made. These "finger omelets" can be modified with just about anything you'd like and are gluten free, soy free, dairy free, tree nut free, peanut free and wheat free. Inspired by my sister, who recently went Paleo. I cannot wait to experiment with more combinations. These little gems can be made ahead and reheated for a quick bite on the go!

Prep time: 10 minutes

Cook time: 10 minutes

  • Ingredients

    6-8 slices of nitrate free bacon (I prefer Applegate Farms)

    4 large hormone free, cage free eggs

    2 green onions, sliced

    10-12 cherub tomatoes, diced

    dash of salt & pepper to taste

  • Methods / Steps
    Preheat oven to 400 degrees. Line or layer a slice or two of bacon in a muffin tin. In a separate bowl, scramble eggs. Combine eggs with the green onions, tomatoes, salt and pepper. Using a 1/4 measuring cup, spoon egg mixture into each muffin cup. Place in oven for approximately 10-12 minutes. Due to differing oven temperatures, watch carefully as to not overcook the eggs.
