Description

These pancakes are decadent!! Inspired by one of my favorite restaurants only they used waffles. I decided to try it, using my favorite baking mix - Glutino's Muffin & Scone Mix, the recipe on the back of the box (egg optional - making it easy to accommodate people with an egg allergy). The box recipe calls for orange juice, but you could use milk as a substitute. These are so rich that syrup is even optional!

  • Ingredients

    Batter:

    1 box glutino muffin mix (used to be Gluten Free Pantry Muffin & Scone Mix)

    2 eggs (can be omitted - use a bit more oj to get a pancake consistency

    1 tbls grapeseed oil or vegetable oil

    1/2 tsp vanilla

    1 1/3 cup orange juice

    1/2 lb uncured bacon

    1/3 cup chocolate chips

    agave or maple syrup

  • Methods / Steps
    Combine muffin mix, eggs, 1/2 tsp vanilla, oil and orange juice - mix thoroughly
    Slice bacon in to bite size pieces and fry - don't overcook
    Add chocolate chips to batter
    Add cooked bacon
    Using a 1/4 cup measuring cup drop pancake batter into a heated pan
    Top with agave or maple syrup (use sparingly - super rich)
