Description

A delicious healthy twist on Shepard's Pie. Made with ground turkey and cauliflower. So delicious, you won't miss the fattier version of this dish. Gluten free and full of flavor, this Shepard's Pie will have you going back for seconds and thirds. Makes for great leftovers for your lunch at the office.

Brown meat in large pan, after meat is browned, add frozen mixed vegetables, onion, tomatoes, pepper, garlic, and salt. Simmer on low heat until vegetables are no longer frozen. Pour into casserole dish. Spread cauliflower mixture over top. Sprinkle with paprika and parmesan cheese. Cover the casserole dish and place in preheated 350 degree oven 15 minutes. Uncover casserole and resume cooking for another 20 minutes or until bubbling.

  • Ingredients
    1 1/2 lbs very lean ground organic beef or turkey
    1 lb bag organic frozen mixed vegetables. (carrots, green beans, peas)
    2 lbs organic cauliflower (steamed, mashed, seasoned with garlic, salt, and pepper)
    1 organic medium onions, diced
    1 can organic diced tomatoes. 1 teaspoon black pepper
    1 teaspoon garlic
    2 teaspoons salt
    1 tsp paprika
    Parmesan cheese. Grated.
