Stuffed Bell Peppers. Clean eating recipe made from organic ingredients. Free of soy, corn, fish, shellfish, peanuts, tree nuts, milk, eggs, wheat and gluten. Can be made vegan. 

  • Ingredients

    1 1/2 pounds organic ground beef, chicken or turkey. (Or if vegan: 3/4 cup black beans and 3/4 cup tofu)

    1 organic onion, diced

    3 organic tomatoes, diced (include not de-seed, keep the seeds and juices)

    2 cloves organic garlic, minced

    2 cups organic cooked wild rice (can use brown)

    3 Tbs Italian seasoning blend (thyme, marjoram, onion, rosemary, oregano basil, savory and sage)

    Pepper and (optionally) salt to taste

    3 Tbs olive oil

    Optional: cayenne pepper and red chili flakes to taste

    6 bell peppers- variety of colors



  • Methods / Steps
    Preheat oven to 350 degrees F
    Cut tops off of bell peppers, remove seeds and insides
    Place bell peppers in pan (for softer peppers, blanch in boiling water)
    Over medium heat, In large skillet, heat olive oil and saute onions and garlic for 3 minutes
    Add in meat and seasonings and stir until browned
    Turn heat to medium low
    Stir in tomatoes
    Stir in cooked wild rice
    Cook, stirring every minute or so, for 5 minutes over the stove.
    Using large spoon, scoop mixture into bell peppers
    Place on middle rack of oven and bake for 50 minutes.
