Mashed potatoes that are creamy without the cream. Using chicken broth and a hint of garlic in place of cream and butter lightens this traditional dish while leaving the flavor. Gluten-free, healthy, organic, healthy, and free of eggs, fish, soy, nuts, and wheat. 

  • Ingredients

    3 1/2 pounds red potatoes, quartered with skin on

    1/2-1 qt Pacific brand organic chicken broth

    2 cloves garlic, minced

    salt and pepper to taste

    Parsley to sprinkle on top as a garnish

  • Methods / Steps
    Boil a large pot of water
    Carefully place potatoes into boiling water, avoiding the water from splashing on you
    Cook for 25 minutes, or until soft
    Drain water
    Add garlic and using an electric mixer,
    Add 1/4 cup chicken broth, mix with electric mixer on medium speed
    Blending in 1/4 cup at a time until smooth and creamy looking.
    Add salt and pepper to taste.
    Whip potatoes for 1 minute with electric mixer
    Place into serving dish. Sprinkle parsley on top.
