Description

 Easy and less than five ingredients. These little potatoes are gluten free, and free of the top 8 allergens. Can be prepared vegan and organic. Perfect side for any entree. Casual and easy for every night meals, but elegant to be served to company.

  • Ingredients

    2 -3 of the small heirloom potatoes (purple, gold, red)

    olive oil

    salt

    pepper

    parsley

    garlic powder

  • Methods / Steps
    quarter potatoes and place in a non-stick pan

    chop onion coarsely and toss with potatoes in pan

    drizzle generously with olive oil, salt, pepper,and garlic powder and toss lightlty to mix together

    chop parsley into fine pieces - set aside to garnish at the end of cooking
    preheat oven to 400 degrees

    roast for approximately 40 minutes or until potatoes are tender on the inside and slightly crisp on the outside
