Roasting Brussels sprouts completely changes the flavor profile dramatically. It eliminates the somewhat sulfur-like flavor and scent of the produce. The feta cheese can be left out to make the dish dairy-free but make sure to adjust the seasoning. Another variation of the dish is to replace the apple cider vinegar with a good balsamic vinegar, which creates a slightly sweeter and richer dish.


  • Ingredients


    2 lbs Brussels sprouts


    5 slices Bacon


    2 tsp Apple cider vinegar


    1/3 cup Feta cheese


    Salt and Pepper, to taste


  • Methods / Steps
    1. Clean the Brussels sprouts and allow to fully dry on paper towels.
    2. Slice Brussels sprouts in half or quarters (depending on size).
    3. Cook bacon in a large frying pan until most of the fat has been rendered.
    4. Remove bacon from pan and allow to cool before chopping roughly.
    5. Carefully place Brussels sprouts in frying pan and stir to coat with fat.
    6. Cook over medium-high heat for about 30 minutes, stirring frequently. The Brussels sprouts are done when they are charred and soft.
    7. Remove from heat and pour in vinegar while scrapping the bottom of the pan.
    8. Add feta cheese and bacon to the Brussels sprouts and stir well.
    9. Add salt and pepper to taste.
