Description

Cool, crisp and packed with good for you veggies. This salad is allergy friendly and can be modified using food allergy sensitive ingredients and gluten-free. If you have a tree-nut allergy you can omit the walnuts. Use vegan mayonnaise or a dairy free mayo substitute. This is great as an appetizer salad or served as a side dish.

  • Ingredients

    DRESSING

    1/2 cup mayonnaise (allergy friendly and vegan substitutes can be used)

    Juice of half a lemon

    salt and pepper to taste

    2 sprigs fresh parsley, chopped

     

    SALAD

    3 stalks celery, diced

    2 pears, peeled, cored and diced

    1/3 cup red, yellow or green pepper, diced

    1/3 cup frozen baby peas - add garbanzo's for added protein

    1/3 cup dried crangerries

    1/4 cup walnuts

  • Methods / Steps
    mix salad dressing in a bowl
    add all salad ingredients to the dressing
    plate on a bed of greens and top with walnuts or sunflower seeds
