Description

With these Berries and Cream popsicles, I found a way to recreate one of my favorite dairy-based popsicles without the dairy. Using coconut milk in place of the cream, the popsicle has the rich, creamy texture that balances perfectly with the sweet yet tart berries. Experiment with various berry combinations to find the one that you love. While a popsicle mold makes the project a little easier, there is no need to purchase one. Just pour your fruit juice into small disposable cups and add a stick to the middle about 30-45 minutes after you place it in the freezer.

  • Ingredients

    1 ½ cups fresh berries (strawberries, raspberries, blueberries, or a combination)

    ½ can of full-fat coconut milk

    1 tsp vanilla extract

    1 ½ tbsp of honey or agave (or more to taste)

     

  • Methods / Steps
    1) Puree strawberries in a blender or food processor. Set aside.
    2) In a separate bowl mix coconut milk, vanilla extract and honey together. Mix until combined thoroughly.
    3) Alternate pouring 1-2 tablespoons of coconut mixture and berry puree into each mold until popsicle molds are filled.
    4) Allow popsicles to freeze completely before serving, about 5-8 hours.
