Description

 This allergy friendly recipe has been floating around Pinterest and the internet for awhile and it looked so good that I just had to give it a try. I made an entire meal from start to finish in about 15 minutes! Super easy, it's become a staple at my house. Paired with the gluten free Lundberg Family Parmesan Risotto or any gluten free rice dish and a fresh steamed vegetable! Voila! A  gluten free gourmet meal you could serve guests. Try this with different spice mixtures...maybe a gluten free taco seasoning or gluten free buffalo chicken seasoning with a ranch on the side. The possibilities are endless!

  • Ingredients

    1 stick of butter

    1 large lemon

    1-2 lbs. peeled and deveined shrimp

    1 packet of Good Seasons Natural Italian Dressing Mix* (the Natural is gluten free, the regular Good Seasons is not. Wishbone is also gluten free, but states, "may contain wheat")

     

  • Methods / Steps
    Preheat oven to 400 degrees
    Melt stick of butter in a pan or microwave until completely melted
    While waiting for butter, place lemon slices on a foil covered baking sheet
    Rinse shrimp and layer on top of lemon slices
    After melted, remove butter from heat and drizzle over shrimp and lemon
    Sprinkle italian dressing seasoning mix over shrimp
    Bake for 15 minutes
    Turn broiler on for last 30 seconds (watch carefully)
    Serve immediately, however this can be made ahead and served chilled.
